Avanzino gli Avanzi - Frittata di Spaghetti con Piselli e Erbe Aromatiche or Spaghetti Frittata with Peas and Herbs

Prima di andare in vacanza nella campagna francese, da dove spero tornerò con tante idee per nuovi piatti, vi lascio con una delle preparazioni della cucina povera italiana: la frittata di spaghetti.
Da quando vivo con Andrea ho preso la sua abitudine di pesare la pasta prima di cuocerla e così non ne avanza mai. Ma quando mi ricordo ne faccio un po' di più per poter fare la frittata che tanto mi piace.
Nato dalla necessità di trasformare cibo avanzato, che non si butta mai niente, questo piatto diventa ricco e saporito, molto più gustoso, a mio avviso, dei piatto di pasta originale.
Per la versione di oggi ho usato ingredienti di stagione, pisellini freschi e erbe aromatiche del mio balcone. Un po' di grana, le immancabili uova e il tutto è pronto per essere cotto in padella. In 15 minuti si mette in tavola un piatto delizioso, sostanzioso, che può essere mangiato anche a temperatura ambiente, adatto per un picnic o presentato in piccole porzioni per un aperitivo sfizioso e un po' rustico.
Ecco come si fa.
  • 1 porzione di spaghetti cotti al dente
  • 2 cucchiai di olio extravergine d'oliva
  • 1 manciata di piselli freschi
  • 1 manciata di grana grattugiato
  • 2 uova
  • sale
  • pepe nero macinato fresco
  • qualche foglia di basilico fresco
  • qualche foglia di menta fresca
Una volta cotta la pasta scolatela e aggiungete 1 cucchiaio di olio, mescolate e lasciate raffreddare. Se la preparate il giorno prima conservatela in frigo fino al momento di utilizzarla.
Quando sarete pronti per preparare la vostra frittata scaldate una padella antiaderente, mettete gli spaghetti in una ciotola capiente, aggiungete i piselli, le erbe aromatiche spezzettate con le mani e il grana, mescolate bene.
Sbattete le uova con una presa di sale e del pepe, poi aggiungetele alla pasta. Amalgamate tutti gli ingredienti.
Mettete il rimanente olio nella padella e ruotatela per ungere bene tutta la superficie.
Versate il mix di pasta e uova nella padella. Fate cuocere per qualche minuto a fuoco medio-alto, fino a che la base della frittata è dorata. Girate la frittata, fatela cuocere anche dall'altro lato e servitela calda o a temperatura ambiente tagliata a fette.

Before going on holiday to the French countryside - and I will hopefully come back with many ideas for new dishes, I want to give you the recipe for one of the most iconic dishes of the Italian peasant cooking: frittata with spaghetti.
Since living with Andrea, I've taken his habit of weighing pasta before cooking it, and so there’s never left to make frittata with spaghetti, but whenever this dish comes to my mind I cook an extra portion and the day after I make this frittata.
This dish was created out of the need to transform leftovers, as we don’t throw away food, and the result is rich and tasty, much nicer, in my opinion, than the original pasta dish.
For today's version I’ve used seasonal ingredients, fresh peas and herbs from my balcony. Some grated Parmesan cheese, the inevitable eggs and everything is ready to be cooked in a pan. In 15 minutes you get a delicious, hearty dish that can be also eaten at room temperature, suitable for a picnic or you can serve it in small morsels for a little rustic pre-dinner cocktail.
Here's how it is made.
  • 1 serving of cooked al dente spaghetti
  • 2 tablespoons extra virgin olive oil
  • 1 handful of fresh peas
  • 1 handful of grated parmesan cheese
  • 2 eggs
  • fine sea salt
  • freshly ground black pepper
  • a few leaves of fresh basil
  • a few leaves of fresh mint
Once the pasta is cooked, drain it and add 1 tablespoon of olive oil, stir and let cool. If cooked the day before, store it in the refrigerator until you need it.
When ready to prepare your frittata, heat a non-stick frying pan, put the spaghetti in a large bowl, add the peas, the herbs torn with your hands and the Parmesan cheese, stir well.
Beat the eggs with a pinch of salt and some black pepper, then add them to the spaghetti. Mix all the ingredients.
Put the remaining oil in the pan and swirl it in the pan.
Pour the pasta and eggs mix into the pan. Cook for a few minutes over medium-high heat, until the base of the frittata is golden. Turn the frittata and cook it on the other side. Serve hot or at room temperature cut into wedges.
