Il Raccolto - Crumble di Rabarbaro e Fragole or Rhubarb and Strawberry Crumble

Quanto mi piacciono i crumbles! Dolci semplici, ricchi di frutta matura che si sfalda in cottura fino a diventare quasi una marmellata con i pezzettoni che si accompagna perfettamente con la copertura spesso croccante grazie a frutta secca, fiocchi di avena e zucchero di canna.
Oggi vi presento con orgoglio il mio crumble fatto con le fragole e il rabarbaro del mio piccolo orto improvvisato un po' per gioco. Quest'anno oltre alle tante erbe aromatiche  e qualche piantina di fragole e fragoline di bosco ho pensato di provare a coltivare il rabarbaro. Ho fatto di necessità virtù visto che da queste parti il rabarbaro sono riuscita a comprarlo una sola volta. Non va di moda? Non piace? Non si sa come usarlo? Ma nei crumbles!!!
Adoro il rabarbaro, credo di essere stata una delle poche bimbe che mangiavano con gusto le caramelle al rabarbaro che i nonni avevano sempre in casa, insieme a quelle d'orzo.
Il sapore del rabarbaro fresco cotto però non ha nulla a che vedere con quelle caramelle di tanto tempo fa, è delicato e un po' acidulo e per questo si accompagna magnificamente con le fragole.
Importantissimo: del rabarbaro si utilizzano i gambi rossi, le foglie sono velenose e si devono buttare. Io le ho lasciate in giardino per le chiocciole che sono dappertutto e non vorrei che decidessero di attaccare le piccole piantine di malvone o i ficus che ho messo fuori per l'estate, all'ombra del ciliegio.
Ecco la ricetta per un piccolo crumble dal sapore ineguagliabile.
3-4 gambi di rabarbaro
20 fragole
3 cucchiai di zucchero semolato
80 g di burro freddo
4 cucchiai di farina
80 g di zucchero di canna
60 g di fiocchi di avena
 
Lavate e tagliate i gambi di rabarbaro in segmenti di circa 1cm, lavate e tagliate le fragole a tocchetti. Mettete le fragole e il rabarbaro in una ciotola con lo zucchero semolato, mescolate e fate macerare per circa 30 minuti.
Accendete il forno a 200°.
Mettete il burro, lo zucchero di canna e  la farina in una ciotola e cominciate a lavorare con la punta delle dita per incorporare il burro e creare così delle grosse briciole. Aggiungete l'avena e incorporatela al composto. Versate le fragole e il rabarbaro, con i loro succhi in una teglia di ceramica rettangolare (la mia è 23cm x 15cm, profonda circa 3cm). Cospargere la frutta con il composto di briciole, infornare e cuocere per circa 20 minuti o fino a che la frutta comincerà a bollire e la superficie del crumble sarà appena dorata. Fate intiepidire prima di servire.

Oh how I love crumbles! Simple cakes of rich ripe fruit that falls apart during cooking that almost becomes a chunky jam that goes perfectly with the crisp pastry topping dotted with dried fruit, oatmeal and brown sugar.
Today I present you with pride my crumble made with strawberries and rhubarb from my little improvised vegetable garden. I started tending to plants for fu, and this year in addition to the many herbs and some strawberries and wild strawberries plants, I thought I'd try to grow rhubarb. I really had to if I wanted to have some, because I was able to buy it only once here in Mantova. Is it out of fashion? People don’t like it? They don’t know how to use it? You can make crumbles with it, of course!
I love rhubarb, I think I was one of the few girls who ate rhubarb candy you could find at your grandparents’ house, along with barley candies.
The flavour of cooked rhubarb has nothing to do with those candies, is delicate with a hint of acidity and it goes beautifully with strawberries.
Very important: use only the red stalks, the leaves are poisonous and must be thrown away. I left them in the garden for the snails that are all over and hoping they’d like them and leave alone the small hollyhock plants or the ficus that I put out for the summer, in the shade of the cherry tree.
Here is the recipe for a small flavoursome crumble.

3-4 stalks of rhubarb
20 strawberries
3 tablespoons granulated sugar
80 g cold butter
4 tablespoons flour
80 g of brown sugar
60 g of oat flakes

Wash and cut the rhubarb stalks into 1cm segments, washed and cut the strawberries into small pieces. Put the rhubarb and strawberries in a bowl with the granulated sugar, stir and let steep for about 30 minutes.
Preheat the oven to 200C degrees.
Put the butter, brown sugar and flour in a bowl and begin working with of your fingertips to incorporate the butter and create large crumbs. Add the oats and incorporate into the mixture. Pour the strawberries and rhubarb, with their juices in a rectangular ceramic baking dish (mine is 23cm x 15cm, and about 3cm deep). Sprinkle the fruit with the crumb mixture and bake for about 20 minutes or until the fruit begins to boil, and the crumble turns golden. Serve warm.
