Chi ben comincia - Miniminiquiches

Stasera siamo a cena da amici e ho deciso di portare un paio di stuzzichini: rotolini di speck e formaggio cremoso che scalderemo un attimo in forno appena prima di servirli e queste mini quiches. Ho usato lo stampo per le mincepies, piccoli incavi che contengono perfettamente cerchi di pasta sfoglia ritagliati con un bicchiere della nutella e riempiti di bontà.
  • 100 g di pancetta affumicata a cubetti
  • 1 cipolla rossa piccola tritata finemente
  • 1 cucchiaio di olio
  • 70 ml di panna
  • 1 uovo
  • 1 manciata di emmentaler grattugiato
  • 1 rotolo di pasta sfoglia fresca
  • 1 noce di burro
Molto velocemente ho soffritto la cipolla e la pancetta nell'olio e le ho poi tolte dal fuoco. Ho ritagliato 12 cerchi dalla pasta sfoglia e li ho posizionati negli incavi dello stampo per mincepies (uno stampo da mini muffins può andar bene comunque) che avevo unto appena con un poco di burro.
Ho suddiviso il mix di pancetta e cipolla versandoli sulle basi si sfoglia, poi ho aggiunto il formaggio e infine ho versato il composto di panna e uovo che avevo precedentemente sbattuto e messo in un dosatore con beccuccio.
Ho infornato per circa 15 minuti a 200° e poi, una volta che le miniquiche si sono gonfiate e dorate le ho sfornate e fatte freddare su una griglia da pasticcere.
Non ho usato nè sale, nè pepe perchè la pancetta è già molto saporita. Avendo fatto 2 quiche a testa non posso assaggiare per vedere se il tutto è cotto a puntino e il gusto è a posto... l'aspetto è invitante, spero che non mi tradiscano!

We’re having dinner at some friends tonight and I decided to bring a couple of appetizers: little speck and soft cheese roll that will need to be heated just before they’re going to be served and these mini quiches. I used the Mincepies oven tray because it is the right size for puff pastry rounds cut using a nutella glass.


• 100 g smocked pancetta diced very thinly
• 1 small red onion chopped thinly
• 1 tbsp olive oil
• 70 ml cream
• 1 egg
• 1 handful grated emmentaler cheese (any other cheese, like cheddar, gouda, Swiss cheese can be used)
• 1 pack ready rolled puff pastry
• 1 knob of butter



Stir-fry the onion and the pancetta in the oil and as soon as their soft and gold take off the heat.
Butter the tray, cut 12 rounds off the pastry and put them in the tray’s hollows.
Spoon the pancetta and onion mix into the pastry cases, then the cheese and the cream and eggs previously mixed in a measuring jug.
Bake in a preheated oven ( 200°C) for 10/15 minutes or until the mini quiches are puffed and golden brown. Allow to cool ona wire rack.
I didn’t use any salt or pepper because the pancetta is already quite savory. As I made exactly 2 mini quiches for each person I cannot taste one to see if they’re ok…they look nice, probably they’ll taste good too, -I hope they won’t fail me!
